What I cooked blather.
I made my SiL dinner tonight and I wanted to try a new recipe I had for pasta carbonara. It was really good. the idea was to get heaps of flavour into the dish, but lower the calorie count and remove some of the bad stuff.
So you chop up an onion, and instead of browning it in oil, you cook it in water first, and once the water is cooked off, you put in a little oil and some proscuitto (with the fat pulled off) torn into pieces and brown it all. Interestingly, this seemed to put so much more flavour into the onions, I was amazed.
In a (big) bowl you mix three egg yolks, chop up some flat leaf parsley and chives, 35 grams of finely grated parmesan and salt and pepper and a few drops of tabasco. Then you cook up the linguini and once it is al dente you drain it and reserve about 8 tablespoons of water. toss the pasta and water in the bowl with the raw egg mixture and toss. This cooks the egg. (note, though you should use really fresh eggs). Then chuck in the onion and proscuitto, and season to taste.
Serve with a green salad. This cuts the calories in half, but I was really impressed with it. The taste is fabulous - I am totally converted to proscuitto. Oddly I have never cooked with it before. I really loved it, I suspect I am about to substitute anything I cook with bacon or ham, it is fabulous.
hope it as good heated up, cause I cooked a stupid amount of the stuff!
